Cilantro Sweet Chilli Chickie

Quick Recipe-cilantro-sweet-chilli-chicken-olive oil
  • 2 1/2 pounds skinless, boneless chicken breasts.
  • 2 tbsp sunflower seeds.
  • 2 tbsp lime juice.
  • 1/4 cup extra virgin olive oil.
  • 1/2 bunch fresh cilantro.
  • 1/4 teaspoon kosher salt.
  • 1/4 tbsp black pepper powder.
  • 1/4 cup minced garlic.
  • 1 small cup sweet chili sauce.
  • Place olive oil, sunflower seeds, garlic, cilantro, salt, pepper, lime juice in a food processor. Process until the mixture is combined and smooth.
  • Place your chicken into contianer, pour mixture over chicken and put in refrigerator to marinate for 2 hour.
  • Preheat the grill to medium heat and coat with oil or grill spray. Remove chicken from the container and grill 4 to 5 minutes on the first side, until good grill marks are showing. Flip and grill an additional 3 to 4 minutes, or until the chicken is cooked through.
  • Remove chicken to a platter and brush the sweet chili sauce on top.

  • Serve with Cummin Fried Rice and Refried Beans.
