Mix the tuna, mashed potato, cheese, sugar, vinegar in a bowl until well combined. Season with salt and black pepper and add lime juice, to taste.
Shape the mixture as required, scatter flour onto one plate, beat the egg in a bowl, then place the breadcrumbs on another plate, Dredge each patties in the flour, then dip it in the beaten egg and roll in the breadcrumbs until completely coated.
Heat a large frying pan with a vegetable oil, When the oil is hot, carefully lower the fish cakes into the pan.
Fry for 3-4 minutes, or until crisp, golden-brown on each side and completely cooked through.
Notes
This dish goes well served with salads, chutney, sauce, noodle's, rice dish.
