Ingredients
- 1 pound large shrimp, uncooked.
- 3 tbsp butter, melted.
- 1 cup crushed crackers.
- Chopped leeks.
- 1 cup fresh crabmeat.
- 1/4 tbsp chopped garlic.
- 2 tsp Worcestershire sauce.
- 1/2 tbsp black pepper powder.
- 1/4 Cup fresh lime juice.
- Mint, basil leaves minced.
- Chopped parsley, garnish.
- 1 lemon, cut into wedges, garnish.
- Salt and pepper to taste.
- Using a sharp knife, butterfly shrimp by cutting along the inner curve, leaving the tails firmly attached. Press the shrimp down flat like a butterfly.
- In a medium bowl, combine the crushed cracker, butter, crab meat, chopped garlic, chopped leeks, Worcestershire sauce, minced basil and mint leaves, lime juice, salt and pepper to taste. Stuff each of the butterfly shrimp with the crab mixture.
- Arrange the stuffed shrimp in a large baking dish.
- Bake stuffed shrimps approximately 10 to 15 minutes or until golden.
- Garnish with fresh parsley or chopped coriander leaves and lemon wedges.
