Ingredients
- 3/4 cup coconut milk.
- 1 cup vegetable stock.
- 1/2 cup chopped fresh tomatillos.
- 2 ripe peeled avocados.
- 1 small garlic clove.
- 3/4 teaspoons kosher salt.
- 1/2 cup lump crabmeat, drained and shell pieces removed.
- 1/2 tablespoon chervil, chopped.
- 1 celery stalk, diced.
- 1 teaspoon finely grated lemon zest.
- Freshly-ground black pepper.
- 2 teaspoon fresh lemon juice.
- 1 1/2 cups water.
- Mix crabmeat, celery, chervil and lemon zest in a bowl. Cover and chill crab salad.
- Transfer first 5 ingredients in a blender and 1 1/2 cups water. Puree until smooth. Season the soup with lime juice, pepper and salt. Turn the soup into a glass bowl and chill completely.
- When ready to serve, divide soup among 4 bowls and garnish the soup with the crab relish.
