  • 12 Slice brown bread.
  • Mint leaves and fresh coriander(1/2 cup), 2 clove of garlic, 1 large tomato, for sauce.
  • 1 Onion, diced.
  • 2 Tbsp olive oil.
  • 1/2 Cup scallions, chopped.
  • 6 Eggs.
  • 1 Cup cream.
  • 1/2 Cup grated low fat cheese.(optional)
  Method
  • Grind mint, fresh coriander, garlic and tomato until everything blends well.
  • Mix together the eggs, cream and chopped scallions, set aside.
  • Heat 1 tbsp oil in a frypan over medium heat and cook onions for 2-3 minutes until soft and lightly golden. Set aside.
  • Roll bread out thin, then brush with remaining oil. Gently press bread into large muffin pans.
  • Spread one spoon of sauce and one spoon of egg mixture into each bread cups.
  • Sprinkle cheese over the top.(optinal)
  • Bake for 20 minutes.
 Note
  • You can add other vegetables, corn, peas, mushroom.
