  • 3 chicken breasts, cut into bite-sized pieces.
  • 8 oz white bread, torn or cut into pieces.
  • 1/8 cup of olive oil, for dressing.
  • 2 teaspoon olive oil, for chicken.
  • 1/4 cup mayonnaise.
  • 2 head romaine lettuce, washed and torn into pieces.
  • 2 hard-boiled eggs, peeled, quartered (optional).
  • 4 oz freshly grated Parmesan cheese.
  • 2 tablespoon lemon juice.
  • 1/2 teaspoon Dijon mustard.
  • 1 teaspoon red wine vinegar.
  • 2 cloves garlic, finely chopped.
  • Fresh ground salt and pepper to taste.
  Method
  • Preheat oven to 180˚C.
  • Prepare the bread. Cut into small chunks and put on a roasting or baking tray. Drizzle with olive oil mixing well. Add salt and pepper. Put into oven and bake until golden brown and crispy, about 20 minutes.
  • Meanwhile, heat olive oil in a frying pan on a medium high heat. Add the chicken and cook for 6-8 minutes or until golden and cooked through. Set aside to cool slightly.
  • Make the dressing, put the mayonnaise, garlic, lemon juice, salt, pepper, mustard and vinegar in a bowl and whisk together. Slowly add olive oil while whisking.
  • Toss lettuce with chicken, bread, egg (optional) and parmesan in a serving bowl. Drizzle over the dressing.
  Note
  • You can experiment dressing with greek style yogurt.
