- 1 1/2 cups banana puree.
- 1 1/2 cups wholemeal self-raising flour.
- 1 cup all purpose flour.
- 3/4 cup cocoa powder.
- 1 cup confectioner's sugar.
- 1/2 cup vegetable oil.
- 1/2 tsp baking soda.
- 1 tsp baking powder.
- 1 tsp white vinegar.
- 1/4 tsp salt.
- 1/3 cup semisweet chocolate chips.
- 1 cup warm water.
- 1/2 cup milk.
- 1 cup chocolate chips.
- 1/2 cup cream.
- 1/2 cup butter.
- Preheat the oven to 350 degrees F.
- Combine flours, cocoa powder, baking soda, baking powder, salt together into a medium bowl. Stir in sugar.
- In a large bowl, mix milk, vinegar, oil, warm water together. Make a well in centre of dry ingredients. Pour in milk mixture, stirring to combine. Pour half of the batter into the baking tray and pour banana puree over the first layer of batter, now again pour remaining batter over the banana puree. Sprinkle chocolate chips over batter.
- Bake 35 to 40 minutes or until toothpick inserted in the center comes out clean. Cool completely, about 10 minutes.
- To make the ganache, combine and heat the cream and chocolate chips in a medium saucepan over medium heat. Cook, stirring often for about 5 minutes, until the chocolate chips dissolves into a dark shiny.
- Switch off heat and let it sit for 5 minutes. Whisk well till no chocolate lumps appear and the ganache becomes smooth and creamy. Mix in the butter. Beat with a mixer at low speed until you have a thick, smooth frosting.
- Pour chocolate ganache over the cake. Refrigerate and serve chilled.
