Ingredients
- 3 large red beets, peeled and cut into 1/4-inch pieces.
- 2 tsp honey.
- 1 large red onion, diced.
- 3 cloves garlic, finely chopped.
- 1 tsp finely chopped ginger.
- 1 tsp olive oil.
- 1 tsp butter.
- 1/2 cup sour cream.
- 4 cups vegetable stock.
- Freshly ground black pepper.
- Salt to taste.
- Fresh dill, to garnish.
- Lemon zest to garnish.
- In a medium pan, heat olive oil and butter over medium heat. Saute onion, 2 minutes, add garlic and ginger; cook, stirring often, 5 minutes.
- Add beets and 4 cups stock; bring to a boil, then reduce heat and simmer until beets are fork-tender, 20 minutes. Add salt and pepper and cook for another 2-3 minutes and remove from heat. Let it cool down.
- With a regular blender, blend the beet mixture until smooth soup is ready.
- Serve in bowls topped with honey, dollops of sour cream, lemon zest and sprigs of dill.
- Serve with crusty bread.
