Ingredients
- 2 pound large green olives, pitted.
- 4 oz crab meat.
- 3 tbsp extra virgin olive oil.
- 1 small carrot, minced.
- 1 small celery stalk, minced.
- 1/2 onion, minced.
- 1 glass white wine.
- 1/2 lemon zest.
- 1/4 tsp nutmeg, freshly ground.
- 1 slice white bread, blended.
- 1/2 cup Parmesan cheese, finely grated.
- 2 egg, beaten.
- 4 oz Breadcrumbs.
- 2 oz all-purpose flour.
- Vegetable oil for deep frying.
- Salt to taste.
- Heat the extra virgin olive oil, minced carrot, onion and celery in a frying pan and sauté for a few minures on a medium heat, until the vegetables are soft.
- Add the crab meat and cook all stuff well. Add salt, nutmeg and white wine and let the alcohol evaporate. Cook on a low heat until the meat is cooked through. Set aside to cool down.
- In the meantime, put the slice of bread in a mixer and blend it finely. Add the meat mixture in a mixer and blend it well.
- Transfer it into a bowl, add the lemon zest, 1 egg, parmesan cheese, the blended slice of bread and mix well until you get a thick consistency. Let it rest for 30 minutes.
- Stuff the olives with mixture. Once stuffed, dust olives in flour, then dip in the remaining beaten egg. Lastly, roll them gently in breadcrumbs.
- Heat 2 inches of olive oil in a large saucepan to fry. Once oil becomes hot, fry stuffed olives until golden brown.
- Once cooked, remove from oil and transfer to a paper-towel-lined dish.
