Ingredients
- 6 puff pastry sheet, thawed.
- 1 cup cream cheese.
- 1/2 cup granulated sugar.
- 1 tsp finely grated lime zest.
- 1 1/2 cup Blackberries.
- 1 1/4 cup Blueberries.
- 1 1/2 cup Raspberries.
- 2 tbsp granulated sugar.
- 1 tbsp cornstarch.
- Place the cream cheese, sugar and lime zest in a bowl. Beat with an electric mixer until the mixture is very smooth.
- In a large bowl, gently toss together berries. Remove 1/2 cup of the berries and set aside remaining berries. Place sugar and 1/2 cup berries in a small saucepan and cook over low heat. Add 1 teaspoon water to cornstarch and stir until smooth. Add cornstarch mixture to berries and sugar stirring constantly until mixture comes to a boil and thickens slightly. Remove from heat and cool completely. Pour cooked mixture into remaining whole berries and gently combine.
- Preheat the oven to 200 degrees celsius.
- Line a tray with baking paper, or lightly grease it.
- Cut the pastry sheet into 12 pieces and place them on the tray.
- Divide the cream and berries mixture evenly between the pastry squares, then roll the edges of the pastry to form a round shape.
- Bake for 15 minutes or until the edges of the pastry are golden brown.
- Serve exta cream or berries.
