Ingredients
- 1 piece carrot, chopped.
- 1 cup cottage cheese, crushed.
- 1 cup cauliflower, grated.
- 2 potatoes, boiled and mashed.
- 2 green chillies, chopped.
- 1 cup carrot, peeled and grated.
- 1 inch ginger, minced.
- 1 1/2 cups all-purpose flour.
- 1/2 tsp red chilli powder.
- 2 tbsp clarified butter.
- 1 tbsp coriander.
- Salt to taste.
- Bamboo Skewers, soaked in water.
- Combine the mashed potatoes and grated cottage in a large bowl.
- Melt the butter in a medium pan.
- Saute grated cauliflower and shredded cabbage for few minutes. Add potatoes and paneer mixture. Season with the salt and mix very well. Now add finely chopped green chillies, ginger and carrot. Saute on medium high heat for 4-5 minutes until it dries. Add remaining spices along with chopped coriander leaves and mix well. Stir in for 2 more minutes and remove the pan from the flame. Set aside to cool.
- Add clarified butter and 2 tbsp all-purpose flour in it.
- Take handfuls of the mixture and wrap around each skewer in the shape of a sausage. Place under a hot grill at the best setting, occasionaly turn each side. When kebabs are done from both sides are crisp and browned.
- Serve them hot with green chutney and salad.

ReplyDeleteI have soup every evening on cold days and mixed-salads on warm days but I'm sometimes fed up to eat the same dish and these veg skewers are an ideal alternative to my veg meals!
