Ingredients
  • 4 cups chopped broccoli.
  • 1/2 cup red onion, chopped.
  • 1/2 cup raisins.
  • 1/2 cup cashews.
  • 8 ounces sharp cheddar cheese, shredded.
  • 1 cup mayonnaise.
  • 2 tablespoons white vinegar.
  • 3 tbsp sugar.
  • 1/2 cup Cherry Tomatoes, halved.
  • Small pinch of pepper.
  • 1/4 cup plain fat-free yogurt.
  • Salt to taste.
  Method
  • Trim, peel, and cut the carrots into 1-inch lengths. Trim, peel, and chop the garlic.
  • Mix chopped broccoli, onion and raisins in large bowl. Take a small bowl add mayonnaise, yogurt, sugar, salt and pepper, vinegar stirring well.
