Ingredients
- 2 cups chicken, cooked and shredded.
- 1/2 cup chicken stock.
- 1 cup mozzarella cheese, grated.
- 1 medium onion, diced.
- 1 cup tomatoes, crushed.
- 1/2 head iceberg lettuce, shredded.
- 1 avocado, chopped.
- 1 red bell pepper, diced.
- 2 tbsp olive oil.
- 1 tbsp ground cumin.
- 1/2 cup plain yogurt or sour cream.
- 1/4 cup cilantro, chopped.
- 8 oz kidney beans.
- 6 tortillas, large.
- 1/2 lime, juiced.
- Salt and pepper.
- Mix the shredded chicken, cilantro, lime juice, and the diced avocados.
- Heat the olive oil in a small skillet. Add the onion and cook 2-3 minutes, stirring frequently until onion is soft. Add the red bell pepper and cook about 2 mins. Add cumin, crushed tomatoes and 1/2 cup of chicken stock. Simmer uncovered for 3-5 minutes or until mixture is thickened. Add the kidney beans and chicken mixture and cook until heated through. Season with salt & pepper.
- Lay out each tortilla and place shredded lettuce onto tortillas. Top with chicken mixture, cheese and a large dollop of sour cream. Fold up the burritos, making sure to enclose both ends.
- Lightly spray a foil lined baking sheet with cooking spray, then lay the burritos seam side down on the tray. Spray the tops of the burritos with the cooking spray.
- Bake for 5-10 minutes or until the outsides of the burrito are lightly browned and crisp.
