Ingredients
- 4 cucumbers.
- 1 white onion, chopped.
- 2 cup sour cream.
- 1/4 cup honey.
- 1 cup vegetable broth.
- 2 tbsp lemon juice.
- 2 tbsp cilantro, chopped.
- Salt and pepper.
- Combine sour cream, honey and vegetable broth in a bowl mix well and set aside.
- Peel and seed cucumbers. Place cucucmber, onion, cilantro, cilantro into a blender and blend until smooth.
- Take out all the cucumber mixture in a lager bowl and add the cream mixture, lemon juice, salt and pepper, whisk to combine. Cover and refrigerate until chilled.
- Garnish with cream, cilantro and chopped cucumber, lemon wedges or onion over the soup before serving.
