Ingredients
- 4 slices of bread.
- 2 slices of smoked ham.
- 4 slices of cheese.
- 1 grilled chourico.
- 1 chicken breast, grilled & cut into 2 thin slice.
- 1 cup beer.
- 1/4 cup chicken stock.
- 2 tbsp butter.
- 1 small carrot, grated.
- 1 small onion, grated.
- 2/4 cup brandy or Port wine.
- 2 tbsp of tomato paste.
- 1/2 cup milk.
- 1 tbsp cornstarch.
- 1 bay leaf.
- 1 clove garlic, minced.
- Salt and Pepper.
- Take a bowl place sweet corn, potatoes, green peas and mash it properly with a help of a masher.
- Heat oil in a pan add the cumin seeds and cook shaking, for about 30 secs until they take on a nutty aroma. Add the chopped green chillies, ginger garlic paste and then the coriander. Sauté for sometime and add salt to taste and pour all the spice mixture in bowl of mashed potatoes mixture, using a masher mix everything properly. Leave to cool.
- For the sauce, heat the butter in a medium-sized saucepan over high heat and add the onion, carrot, garlic, salt and pepper and cook, stirring regularly, for five minutes until the vegetables are caramelised and fragrant. Stir through the tomato paste and cook a further minute, then add the bay leaf, chicken stock, port wine, beer and milk, and bring to a simmer. Simmer for 30 minutes, then stir through the cornstarch until the sauce is thickened. The sauce should be the consistency of thin gravy. Strain the sauce to remove any solids.
- For the sandwich, toast the bread and butter it lightly. Assemble the sandwich and save 2 slices of cheese. Put the sandwich on a plate or shallow bowl and place the 2 slices of cheese on top. Grill the sandwich until the melted cheese wraps the bread. To serve, top the sandwich with a fried egg and place it in a deep dish. Pour over the sandwich. Serve along with french fries.
