Ingredients
- 1 tbsp Olive Oil.
- 1 medium Red Bell Pepper, Diced.
- 1 cup Drained Black Beans, Canned.
- 1/2 cup Sweet Yellow Corn 1 Cup, Kernels.
- 1/2 cup Onions Raw, Chopped.
- 2 cloves Garlic Raw, Chopped.
- 1 tsp Pepper Black, Crushed.
- 4 medium Tortillas, Ready-to-bake Or -fry, Corn.
- 2 cup Cheddar Cheese, Shredded.
- 1 cup Coriander Leaves Raw.
- 20 gm Spicy Piri Piri.
- 1 oz Jalepenos Sliced.
- 2 tsp Lemon Juice.
- Salt and Pepper, as per taste.
- Now heat oil in a medium pan over medium-high heat.
- Add the bell peppers, black beans, corn, onion, garlic, salt, and pepper and cook for 1-2 minutes.
- In a clean skillet over medium heat, add a tortilla.
- Now top with cheese, veggies mixture, another layer of cheese, jalepeno slices, piri piri sprinklers, coriander and lime juice.
- Place another tortilla on top and cook, flipping once, until golden on both sides, about 3 minutes per side.
- Repeat with remaining ingredients.
- Slice and Serve with sour-cream cilantro sauce and Salsa.
