Easy Chicken Quesadillas


  Ingredients
  • 3 1/2 cups shredded cooked rotisserie chicken.
  • 8 (8 inch) flour tortillas.
  • 2 cups finely shredded cheddar cheese.
  • 1/2 cup yogurt.
  • 1/2 tbsp Black pepper powder.
  • 1/2 cup salsa.
  • Salt to taste.
  • Salsa, for serving (optional).
  • Sour cream, for serving (optional).
  Method
  • Combine chicken, cheese, yogurt, salsa, salt, pepper powder in a bowl.
  • Put 1 tortilla on a cutting board and spread chicken mixture over half of tortilla, then fold other half over and press down slightly to "seal". Assemble 7 more quesadillas in same manner.
  • Bake at 400°F for about 5 minutes or until tortillas start to brown.
  Notes

  • Serve with sour cream and, if desired, additional salsa.
