Ingredients
- 4 rock lobster tails.
- 3 cloves garlic, chopped.
- 1 tbsp lemon juice.
- 4 tbsp olive oil.
- 1/8 tbsp white pepper.
- 1/8 tbsp fresh black pepper powder.
- 3 tbsp red wine.
- 1/2 tbsp red chili powder.
- 1 red chili flake.
- Salt to taste.
- 2 teaspoons of dried Oregano Leaves, for garnish.
- 1/4 cup of chopped Parsley or Coriander, chopped for garnish.
- Remove the shells from the rock lobster tails, leaving the tail fan at the end attached.
- Make the marinade. Mix all the ingredients with the lobster tails. Mix well and Marinate in the refrigerator for about 1 hour.
- Heat the grill on a medium heat. Lightly oil grill grate. Place tails, flesh side down, on a medium hot grill.
- Cook for about 8 to 10 minutes on each side, or until the lobster tails are just cooked. Garnish with herbs.
Note
- Remove the skewer, prop up the meat and serve over rice with lemon.
