Ingredients
- 12 Slice brown bread.
- Mint leaves and fresh coriander(1/2 cup), 2 clove of garlic, 1 large tomato, for sauce.
- 1 Onion, diced.
- 2 Tbsp olive oil.
- 1/2 Cup scallions, chopped.
- 6 Eggs.
- 1 Cup cream.
- 1/2 Cup grated low fat cheese.(optional)
- Grind mint, fresh coriander, garlic and tomato until everything blends well.
- Mix together the eggs, cream and chopped scallions, set aside.
- Heat 1 tbsp oil in a frypan over medium heat and cook onions for 2-3 minutes until soft and lightly golden. Set aside.
- Roll bread out thin, then brush with remaining oil. Gently press bread into large muffin pans.
- Spread one spoon of sauce and one spoon of egg mixture into each bread cups.
- Sprinkle cheese over the top.(optinal)
- Bake for 20 minutes.
- You can add other vegetables, corn, peas, mushroom.
