- 8 chicken drumsticks, skinless.
- 1 1/2 cup panko breadcrumbs, japanese style.
- 1 tsp grated garlic.
- 2 tsp minced basil leaves.
- 1/4 cup honey.
- 1/4 cup lemon juice.
- 1/4 tsp salt.
- 1/8 tsp cayenne pepper.
- 1/8 tsp red pepper flakes.
- 1/2 tsp dried thyme.
- 2 tsp olive oil.
- cooking spray.
- 2 tsp honey.
- 1 1/2 tsp dijon mustard.
- 2 tsp mayonnaise.
- Make a marinade first in a medium bowl, mix together honey, lemon juice, olive oil, chicken and toss to coat well, cover and refrigerate for 1 hour.
- Meanwhile prepare panko coat, oven and honey mustard sauce. Panko Coat: Combine panko, basil, both peppers, dried thyme in a shallow bowl, and set aside.
Oven: Preheat oven to 400 degrees. Spray a baking pan with non-stick cooking spray. Honey Mustard Sauce: In a small bowl, mix the honey, dijon mustard, and mayonnaise. Serve with chicken. - Remove chicken from refrigerator and discard marinade. Dredge each piece of chicken in the panko mixture and arrange in a single layer on the rack; coat drumsticks lightly with cooking spray. Bake at 400 for 35 minutes or until desired crispness is reached.
