1/2 cup shredded cheddar cheese (medium or sharp).
Freshly ground black pepper to taste.(optional)
1/2 cup yogurt.(optional)
1/2 teaspoons diced green onions.(optional)
2 chopped tomatoes.
Fresh chopped coriander.
Method
Heat oven to 400° F.
Scrub the potatoes and pierce each with the tines of a fork. Bake until fork-tender, about 45 minutes.
Carefully cut each potato in half. Scoop out the insides and stir in the butter.
Using a potato masher, potato ricer, or fork, mash potato pulp until no lumps remain. Add yogurt, salt, and pepper; stir Spoon the mixture back into the potato halves, creating a hollow in each center.
Break 1 egg into each hollow. Sprinkle cheeses, tomatoes, green onions, black pepper, coriander.
Arrange on a baking sheet and cook 10 to 15 minutes or until set. Remove from oven and serve
Note
You can add other vegetables, mushrooms, Bacon, Ham.
