Baked Potoes Eggs

  Ingredients

  • 2 large baking potatoes.
  • 2 tablespoons butter.
  • 4 large eggs.
  • 2 large cloves garlic, minced.
  • 1 teaspoon kosher salt.
  • 1/4 cup grated Parmesan.
  • 1/2 cup shredded cheddar cheese (medium or sharp).
  • Freshly ground black pepper to taste.(optional)
  • 1/2 cup yogurt.(optional)
  • 1/2 teaspoons diced green onions.(optional)
  • 2 chopped tomatoes.
  • Fresh chopped coriander.
  Method
  • Heat oven to 400° F.
  • Scrub the potatoes and pierce each with the tines of a fork. Bake until fork-tender, about 45 minutes.
  • Carefully cut each potato in half. Scoop out the insides and stir in the butter.
  • Using a potato masher, potato ricer, or fork, mash potato pulp until no lumps remain. Add yogurt, salt, and pepper; stir Spoon the mixture back into the potato halves, creating a hollow in each center.
  • Break 1 egg into each hollow. Sprinkle cheeses, tomatoes, green onions, black pepper, coriander.
  • Arrange on a baking sheet and cook 10 to 15 minutes or until set. Remove from oven and serve
  Note
  • You can add other vegetables, mushrooms, Bacon, Ham.
