2 1/2 cup spinach, washed & chopped.
1 cup besan (chickpea flour).
1/2 cup rice flour.
1 onion, sliced.
3 green chilies, chopped.
1 tsp carom seeds (ajwain).
1 tsp ginger-garlic paste.
1/2 tsp red chili powder.
1/2 tsp turmeric powder.
2 tsp kasuri methi (dried fenugreek leaves).
Some lemon zest.
Salt to taste.
In a bowl, add the besan (chickpea flour), onion, turmeric powder, carom seeds, green chili, red chili powder, kasuri methi (dried fenugreek leaves), salt and ginger-garlic paste and lemon zest. Whisk well.
Add some water and mix well. Do not add too much water and make a thick batter.
Heat oil in large skillet over medium high heat.
Now add spinach into batter and coat it well.
Fry coated spinach until golden brown, drain and serve.......Enjoy!
