Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts (cut into large bite-sized chunks).
- 1/4 cup greek-style yogurt.
- 2 tbsp lime juice.
- 2 tbsp Ginger-Garlic paste.
- 1/2 tbsp freshly ground black pepper.
- 2 tbsp extra virgin olive oil.
- 3 tbsp garam masala.
- 2 tbsp extra virgin olive oil.
- 1/2 cup chopped fresh cilantro.
- 1/4 tbsp kosher salt.
- 4 tbsp unsalted butter.
- 2 tbsp Ginger-Garlic paste, for gravy.
- 1 large white onion, finely chopped.
- 1/2 cup heavy cream.
- 1 1/2 cups tomato puree.
- 1 cup water.
- Beat the chickpea flour with some water to make a thick batter in a blender for 4-5 minutes to incorporate air (this will make the batter fluffier).
- In a large bowl, whisk yogurt, 2 tbsp olive oil, 2 tbsp lime juice, pepper and 2 tbsp Ginger-Garlic paste. Add the chicken, and rub the marinade over the meat. Set the chicken aside while you make the sauce.
- Place a large skillet over medium heat and add the remaining 2 tbsp olive oil and butter. When the butter has melted, add the onion and saute, stirring occasionally, until light brown and caramelized, about 5 minutes. Add the Ginger-Garlic Paste and saute until lightly browned around the edges.
- Add the tomato puree, cook until the tomato has darkened in color, about 3 minutes. Add the garam masala and saute for about 1 minute to draw out their flavors, add 1 cup water, heavy cream, and salt, and bring the sauce to a boil. Reduce the heat to gently simmer the sauce, until thickened slightly, about 10 minutes.
- Meanwhile, heat a grill or skillet over moderately high heat until very hot and lightly brush it with oil. Cook the chicken, turning them a few times and lowering the heat if the chicken chars too quickly, until just cooked through and browned well on both sides, 6 to 8 minutes total. Add the chicken to the simmering sauce and continue to gently simmer it, stirring occasionally, for 5 minutes.
- Garnish with fresh cilantro, and serve with naan, or a crusty piece of bread or rice!
