Ingredients
- 500gm Basmati Rice, White, Long-Grain, Boiled and Drained.
- 100gm Ghee.
- 150gm Paneer(Cottage Cheese), Diced and Lightly Sauteed.
- 100gm Carrots, Diced and Boiled.
- 100gm French Beans, Chopped and Boiled.
- 100gm Peas, Boiled.
- 1 tsp Cinnamon, Crushed.
- 3 tbsp Crumbled Bay Leaf.
- 2 tbsp Cumin Seed.
- 1 tsp Cardamom, Crushed.
- 1 tsp Black Pepper, Crushed.
- 2-3 Whole Star Anise.
- 3-4 Cloves.
- 1 tsp Fried Onion for Garnishing.
- 1 Pinch of Sugar.
- Salt to Taste.
- Mint Leaf for Garnishing.
- 1 tsp Saffron Water.
- Heat the ghee and cumin seeds and saute until brown in colour.
- Now add whole star anise, bay leaf, cardamom, cinnamom, black pepper and saute for 1 minute.
- Now add all boiled vegetables, sugar and stir well for 1 minute.
- Now add paneer/ cottage cheese, stir well.
- Now add boiled rice and safron water and gentally mix, rice will break if to much mixing.
- Now garnish with fried onion, mint leaf cover and cook for more 1 minute.
- Serve hot with curd and papad.
